Winter Potato Salad
Ingredients
bullet1 1/2 lb small potatoes
bullet3/4 cup plain fat free yogurt
bullet3 tbsp white wine vinegar
bullet1 tbsp minced fresh dill
bullet1 tbsp minced fresh parsley
bullet2 tsp minced fresh tarragon
bullet1/2 med onion, chopped
bullet1 celery rib, chopped
bullet1 sm carrot, coarsely shredded
 

Cook potatoes until tender but firm; cool and slice.  In a large bowl, combine remaining ingredients.  Add potatoes and stir until well coated.  Chill for several hours.

Yield:  8 servings
