Warm Mustard Potato Salad
Ingredients
bullet2 lbs small red potatoes
bullet1 cup mayonnaise
bullet1/4 cup Dijon mustard
bullet1/2 cup chopped red onion
bullet2 green onions with tops, sliced
bullet2 garlic cloves, minced
bullet3 tbsp snipped fresh dill or tbsp dill weed
bullet1/2 tsp salt
bullet1/2 tsp pepper
bullet1/4 tsp lime juice

Boil potatoes until tender, about 25 minutes.  Drain and cool slightly.

Combine the remaining ingredients.  Cut potatoes into chunks and place in a bowl.  Add the mustard mixture and toss to coat.  Serve warm.

Yield: 8-10 servings
