Ultra-Creamy Mashed Potatoes |

Ingredients |
 |
 | 2 cans (14 oz each) Chicken broth |
 | 5 large potatoes, peeled and cut into 1 inch pieces |
 | 1/2 cup half and half cream |
 | 2 tablespoons butter or margarine |
 | Pepper to taste |
Combine broth and potatoes in a sauce pan. Bring to a boil. Cover
and cook over medium heat 10 minutes or until potatoes are tender. Drain,
reserving broth. Mash potatoes with 1/4 cup reserved broth, cream, butter
and pepper. Add additional broth, if needed, until desired consistency.
Yield: 6 servings
