Potatoes Ranchero
Ingredients
bullet1/4 cup butter
bullet1/4 cup flour
bullet2 cups milk
bullet1 tsp salt
bullet1/4 tsp pepper
bullet3/4 cup chopped green onions
bullet6 cups sliced, cooked potatoes
bullet1 green pepper, cut into rings
bullet1/2 cup barbeque sauce
bullet8 oz sharp cheddar cheese, grated

Peel and cook potatoes until tender; drain, slice and set aside.  Make cream sauce (see below).  Add onions and cheese to cream sauce, stir to melt cheese.  Alternate layers of potatoes and cheese sauce in 12 x 8" baking dish lightly greased.  Top with green pepper rings and barbeque sauce.

Cover loosely with foil.  Bake at 350° for 25 - 30 minutes.
