Ingredients |

 | 1/4 cup butter |
 | 1/4 cup flour |
 | 2 cups milk |
 | 1 tsp salt |
 | 1/4 tsp pepper |
 | 3/4 cup chopped green onions |
 | 6 cups sliced, cooked potatoes |
 | 1 green pepper, cut into rings |
 | 1/2 cup barbeque sauce |
 | 8 oz sharp cheddar cheese, grated |
Peel and cook potatoes until tender; drain, slice and set aside. Make
cream sauce (see below). Add onions and cheese to cream sauce, stir to
melt cheese. Alternate layers of potatoes and cheese sauce in 12 x 8"
baking dish lightly greased. Top with green pepper rings and barbeque
sauce.
Cover loosely with foil. Bake at 350°
for 25 - 30 minutes.
