Italian Potatoes 1
Ingredients
bullet4 med potatoes, peeled & sliced
bullet2 tomatoes, diced
bullet1/2 cup Provolone, Swiss or Monterey Jack cheese
bullet1/4 cup grated Parmesan cheese
bullet1/2 tsp oregano
bullet1 large onion, thinly sliced
bullet2 tbsp butter or margarine
bulletSalt & pepper to taste

Coat casserole dish with butter.  Layer potatoes, onions, cheese, tomatoes, oregano, salt & pepper;  repeat.  Sprinkle top with Parmesan cheese.  Dot with butter.  Bake uncovered at 400° for 50 minutes or until done.
