Hash Brown Potatoes & Zucchini
Ingredients
bullet2 large potatoes, peeled
bullet1 medium zucchini
bullet1 medium onion
bullet2 egg whites
bullet1/3 cup matzo meal
bullet1 tablespoon + 1 tsp soy sauce

Shred potatoes & zucchini. Grate onion.  Combine vegetables and remaining ingredients in a medium size bowl.  Spray a large skillet generously with no stick cooking spray, add mixture.  Cook until brown and crusty.
