Salad:
 | 4 large red potatoes, peeled and cooked |
 | 1 1/2 cups cooked whole kernel corn |
 | 1 cup shredded carrot |
 | 1/2 cup chopped red onion |
 | 1/2 cup diced green pepper |
 | 1/2 cup diced sweet red pepper |
 | 1/2 cup sliced pitted ripe olives |
Dressing:
 | 1/2 cup olive oil |
 | 1/4 cup vinegar |
 | 1 tablespoon sugar |
 | 1 1/2 teaspoons chili powder |
 | 1 teaspoon salt |
 | Dash hot pepper sauce |
Cube potatoes; combine with corn, carrot, onion, peppers and olive in a salad
bowl. In a small bow combine all dressing ingredients. Pour dressing
over salad, toss lightly. Cover and chill.
