Bacon Potato Roll Ups
Ingredients
bullet1 lb bacon
bullet5 russet potatoes
bulletToothpicks

Sauce For Dip

bullet1 cup sour cream
bullet4 scallions, chopped

Cut potatoes into cubes about 1/2 the size of an ice cube.  Cut bacon strips in thirds.  Roll one bacon strip around each cube and secure with toothpick.  Bake at 350° for 25 minutes or until bacon is crisp and potato is soft.  Serve with dip.
